Chun Xia Qiu Dong is one of the chic and high end hot pot restaurants in Beijing, featuring high quality and exquisitely made materials (hot pot ingredients). The vegetables are all organic and they are presented freshly. What I highly recommend is its shrimp hua and cuttlefish hua (hua literally means slippery ). They are presented as smashed fish and when you made it into the broth, the smashed fish will soon become a ball, and it taste so slippery and very tasty). As for the vegetable, I recommend Zhusheng (a kind of fungus grown at the root of bamboo). Zhusheng taste very fresh, and when boiled it in broth and then dip the sauce, the taste is just divine.
