Miancha porridge

MianCha Porridge is very poplar breakfast food in Beijing,Tianjin, shanxi jinzhong, taiyuan and other places. It's made from millet flour, sesame paste and white & black sesame seeds. A salty sesame butter in a thick porridge. The Flavor is so rich. It's so fragrant especially when you feel the texture.

It is in fact made from mixing the grinded millet or white millet flour with cool water first, to produce the paste or porridge-like stuff, and then boiling the mixture in the pot and keep stirring it in the mean time. When the mixture becomes exceptionally dense and sticky, it can be poured in small bowls. Then, some sesame paste would be pour over the whitish porridge, and pepper, salt, sesame and ginger powder etc would be sprinkled over it. When devouring it, the sesame paste needs to be mixing thoroughly with the porridge. But to the old Beijing people, the most important thing is to mixing the contents in the bowl while drinking it without using the chopsticks or spoon, only by sipping the porridge along the edge of the bowl with the mouths. It is a very complicated and mysterious trick that only the old generation of Beijing locals can master now.

Old Beijing person drinks MianCha Porridge without spoon and chopstick, and they want to take bowl in one hand however, put the mouth up first, stick bowl edge, turn a circle to drink. MianCha Porridge is very hot, actually it is more appropriate to use a suction. MianCha Porridge in the bowl and the sesame sauce flow together to the side of the bowl and then into the mouth. Each bite is both the sesame paste and the noodle tea.
